This simile was used by Jesus when He was asked why His disciples don't fast.

I've come accross some creative explanations for this. This simile is based on two facts:
1)Leather stretches only a bit. Trying to strecth it further will tear it.
2)Carbon Dioxide is generated by the fermentation process.

Fermentation turns the sugars in a liquid into alcohol and CO2. When the sugars are exhausted or the alcohol levels reach a certain level, fermentation stops. The alcohol levels are not usually what stop fermentation in natural wines. It does in fortified wines, but that is not really relevant to this explanation.

New wine has sugar still available for fermentation, so it will keep on fermenting. In old wine there is no sugar left over for fermenting or the yeast organism has been killed. So, no more fermentation in old wine.

Put new wine in a new leather bottle and the fermentation process will generate gas (no, not petrol) which will stretch the bag to near the limits of its elasticity. After that this bag is only good for old wine. Put new wine into it again and the gas will cause it to rupture.

And that is it. Putting new wine into old bottles was something which just was not done, like wedding guests fasting while the bride-groom was still with them.

I have seen explanations for this which would do Timothy Leary proud. The truth is much more mundane.
